Chocolate Chip Cookies

INGREDIENTS
1/2 c. Rolled Oats (grind in food processor)
2 1/4 c. (9 oz.) All Purpose Flour
4 tsp. Cinnamon
1 1/2 tsp. Baking Powder
1 TBS Salt
3/4 c. Packed Light Brown Sugar
3/4 c. Granulated Sugar
8 oz (2 Sticks) Unsalted Butter
2 Large Eggs
2 tsp. Vanilla Extract
2 tsp. Lemon Juice
2 c. Chocolate Chips
1 c. Chopped Nuts (optional)
INSTRUCTIONS
PREHEAT oven to 350*F. Line 15x10 sheet pan/cookie sheet/jelly roll pan with parchment.
COMBINE oat flour, all purpose flour, cinnamon, baking powder, and salt in a small bowl. Cream butter, brown sugar, granulated sugar,, vanilla extract, and lemon juice in a large mixer bowl. Add eggs one at a time, beating well after each addition. Gradually mix in flour mixture. Stir in chocolates chips. With a #30 scooper, drop batter on prepared cookie sheet space 1” apart.
BAKE for 8-10 minutes or until golden brown. Place cookies on a wired rack to cool.
